Easy and Delicious Crustless Broccoli Cheddar Quiche


There is something so perfect about a quiche. Whether it's for breakfast, lunch or brunch, this magical mixture of eggs and cheese always manages to satisfy.


For the longest time, I used to think that making a quiche just HAD to be difficult. And the finished product MUST be super fattening! I mean really...how can you have eggs and cheese without a ton of fat and calories? And with that buttery, flaky crust...this just cannot fit into my meal plan on a regular basis, can it?


As it turns out, making a quiche is beyond simple! And if you decide to make it crustless? Well, then it's even easier AND a whole lot lighter! All you need to do is mix the ingredients together in a bowl and pour them into a pie dish. Pop it in the oven and your done! If it's this simple, why does it seem so hard to make? Beats me! Check out the recipe and try it for yourself and let me know if you still think it's difficult to make an excellent - and healthy - quiche. I know I'm sold!


A couple of notes:

  • I used fresh broccoli and steamed it in the microwave, but you can use frozen if that's all you have on hand. Cook the broccoli for a minute or two but be sure not to over cook it. It will cook more in the quiche.

  • I used 2% milk (instead of heavy cream) and reduced-fat cheddar to make it lighter.

  • If you wish to use a pie crust, go right ahead. It will make the quiche higher in calories and fat, but it will be delicious. It will cook up the same. Just follow the instructions for you pie crust, whether frozen or making from scratch.

  • This can also be made individually by using smaller ramekins. The individual portions are great but will require slightly less baking time. Just watch to avoid over-cooking!



Easy and Delicious Crustless Broccoli Cheddar Quiche


Ingredients:

  • 6 large eggs

  • 3 cups fresh broccoli florets

  • 1 cup 2% reduced fat milk

  • 1 cup reduced-fat shredded cheddar

  • 3/4 tsp salt

  • 1/4 tsp fresh ground pepper

  • 1/8 tsp garlic powder

  • Cooking spray


Directions:

  1. Preheat oven to 350 F.

  2. In a microwave-safe bowl, add broccoli and 2 tablespoons of water. Cover and microwave on high for 3 minutes. Carefully remove broccoli and place on paper towels to dry. Roughly chop into small pieces.

  3. In a medium mixing bowl, whisk eggs. Add milk, salt, pepper, and garlic powder, Whisk until combined. Stir in broccoli and cheese.

  4. Spray a 9-inch pie dish with cooking spray. Pour egg mixture into dish. Make sure broccoli is distributed evenly.

  5. Bake for 45-50 minutes or until the middle is set. As oven temperatures differ, keep an eye on your quiche so it doesn't overcook.
