Quick and Easy Chicken and Peppers

There is nothing like a quick and delicious meal that you can throw together in a pinch. And this is one of those recipes. I have no nostalgic backstory for this recipe, except to say that it has saved me time and time again!

...When all I had in the refrigerator was chicken because I didn't make it to the store, this recipe was there for me...

...When I got caught up with the day and was too late to get dinner in the crockpot, this recipe was there for me...

...When baseball practice was rescheduled for TONIGHT because the last few practices were rained out, this recipe was...

Well, you get the point! And I guess I am a little nostalgic about this recipe after all. I have to appreciate the meals that can be on the table in a snap, are healthy, and are loved by the whole family. It really doesn't get much better than that in my book!

Quick and Easy Chicken and Peppers


  • 1 lb chicken breasts, cut into 11/2 inch chunks

  • 2 tbs gluten-free flour

  • Salt and pepper

  • 4 tsp olive oil, divided

  • 2 bell peppers (red, yellow or green)

  • 1 large onion, thinly sliced

  • 6 garlic cloves, thinly sliced

  • 1 28 oz can crushed tomatoes

  • 1 can water

  • 1 tbs oregano

  • Fresh basil for garnish

  • Crushed red pepper (optional)


  1. In a plastic zip-loc bag, add flour, salt and pepper. Mix well. Add chicken, seal bag, and shake to coat with flour.

  2. In a large saute pan, heat olive oil over medium-high heat. Add chicken and cook until chicken is no longer pink inside Remove to a plate and cover.

  3. Add 2 more tsp olive oil to pan, and add onions and pepper. Cook, stirring often, until onions and peppers are almost tender (about 6-8 minutes). Add garlic and cook 2 minutes more.

  4. Add tomatoes, water, salt, pepper and oregano. Stir and simmer covered for 20 minutes. Remove lid and simmer for 10 minutes until the sauce has thickened.

  5. Garnish with fresh basil and crushed red pepper, if desired. Serve over pasta, rice or eat plain.
